Tofu history in China — Tofu is very popular in the East today but tofu was first eaten in China over 2,000 years ago. An ancient Chinese painting on a stone shows that soymilk (豆浆) and tofu were being made in China during 25~220. The oldest written material of tofu also appeared in China in about 1500, in a poem Ode to Tofu by Su Ping.
Tofu history in Japan — Kento priests (教士), who went to China, brought tofu back to Japan during the Nara era (710-794). The word “tofu” was first mentioned in Japan in the diary of a priest called Nakaomi. In 1489, the word “tofu” was first written in the actual Japanese characters. Tofu gradually became popular in Japan. The cooking book Tofu Hyakuchin came out in 1782 and sold very well.
Tofu history in Western world — In 1603, a Spanish dictionary was the first European document with the word “tofu”. Domingo Fernandez de Navarrete described in his book A Collection of Voyages and Travles how tofu was made. The first English reference (参考资料) to tofu was in 1704, when Navarrete’s book came out in English. Tofu was first produced in France by Paillieux in 1880. Hirata & Co started to make tofu in San Francisco in 1895.

When should people start to buy Christmas presents? One week before the day? Two weeks? Western children start buying presents months before Christmas. As the day comes nearer, children write lists of what presents they want to give and receive.

We know that many animals do not stay in one place. Birds, fish and other animals move from one place to another at a certain time. They move for different reasons: most of them move to find food more easily, but some move to get away from places that are too crowded.
When cold weather comes, many birds move to warmer places to find food. Some fishes give birth in warm water and move to cold water to feed. The most famous migration (迁徙) is probably the migration of one kind of fish, which is called salmon (大马哈鱼). This fish is born in fresh water but it travels many miles to salt water.
